Our Story
At the heart of Conserva are Challis and Lauren Hodge — partners in life, business, and the art of creating unforgettable experiences through food and wine.
Challis, Executive Chef and co-founder, is a builder by nature and a chef by calling. He brings bold vision, relentless curiosity, and a deep respect for tradition — balanced with a constant push toward what’s next. Every dish at Conserva carries his passion for authenticity, storytelling, and craft.
Lauren is more than the face of the front of house — she’s the soul of the guest experience. A passionate people person and deeply knowledgeable wine expert, she brings warmth, depth, and intention to every interaction. Whether she’s recommending the perfect bottle or remembering exactly what you loved last time, Lauren makes every visit personal. Her taste is impeccable, her instincts are trusted, and her presence is part of what keeps guests coming back.
Together, they created Conserva to celebrate something rare — Tapas Culture, a centuries-old Spanish tradition rooted in sharing. At its core, it’s not just about the food. It’s about slowing down, connecting, and letting the table become the main event. Conserva was built for that.
A space to gather, to taste, to connect — with friends, with strangers, with the moment.
